I finally broke free from of my fruity comfort zone and branched out to savory oatmeal. Savory oatmeal is a great way to fit lots of veggies and protein into breakfast without doing the typical omelet or tofu scramble.

Savory Oatmeal with Kale, Sweet Potato & Black Eyed Peas [Vegan, Gluten-Free]

Ingredients
- 1 small onion
- 1-2 cloves garlic
- 1 1⁄2 c sweet potato
- 1 1⁄2 c chopped kale (I used frozen for convenience.)
- 1⁄2 c black eyed peas (I used frozen.)
- 1 c steel cut oats (gluten-free optional)
- salt
- pepper
- sage
- thyme
- 2 1⁄2 c water + extra for sauteing
- olive oil
Directions
- Saute onion in 1-2 TBS of water in a large skillet over high heat. Cook until soft and translucent.
- Add garlic cloves. Saute for about 30 seconds.
- Add sweet potato, kale, and peas.
- Stir in seasoning. Add 2 1/2 cups water.
- Add oats and stir everything together.
- Reduce heat to medium low and cover.
- Cook for 15 minutes, stir occasionally.
- Serve with a drizzle of olive oil, freshly ground black pepper, and a sprinkle of sea salt.
Variations:
- Using the same cooking method, make this with your favorite veggies and seasonings. Get inspired by the savory oatmeal recipe roundup at The Kitchn.
- Leave out the beans and serve with a poached egg or tofu over.
- Nuts can be used in place of beans too.
