Have you tried kohlrabi yet? It's the texture of broccoli stems and has a mild, slightly sweet flavor. I love it sauteed with other veggies, but it's also yummy raw and really shines in this coleslaw. This unique and impressive simple slaw is a great vegan and vegetarian dish to serve at your BBQ or picnic.
Kohlrabi Kale Coleslaw

Ingredients
- 2 large kohlrabi
- 2 small radishes
- 1 large carrot
- 1 small red onion
- 1 small bunch kale I used Lacinato (aka Dinosaur) variety
- 1⁄2 cup raisins
- 1⁄2 cup mayonnaise I recommend Sir Kensington (Egg-free vegan formula, Fabanaise, available too.)
Directions
- Using shredder attachment on food processor, shred kohlrabi, radishes, and carrot together. Put in a large salad bowl.
- Use food processor to dice the onion. Add to bowl with other veggies.
- De-stem and cut kale into ribbons. Add to bowl.
- Add raisins to bowl.
- Toss with clean hands (or use two forks) to mix everything together.
- Stir in the mayo gradually, as needed.
- Place in fridge. Allow to marinate for an hour to overnight.
